Intensity. Tartufata Classic carries a balanced truffle character that suits everyday cooking, while Tartufata Premium has a deeper, richer truffle presence that leads the dish. If it's your first jar, start with the Classic; if you already know you love truffle, go Premium.
Truffle oil is a finishing oil, not a cooking oil. Heat destroys the delicate aroma, so always add it at the end — off the heat, just before serving. A few drops over the finished plate is all it takes.
Black truffle oil is earthy and robust — at home on pasta, pizza, red meat, mushrooms and roasted vegetables. White truffle oil is lighter and more perfumed, beautiful over eggs, risotto, white fish and creamy dishes. Many kitchens keep one of each: black as the bass note, white as the top note.
Tartufata is Italy's ready-to-use truffle sauce — black truffle blended with mushrooms and olive oil. Stir a spoonful through hot pasta with a splash of the cooking water and you have an instant truffle sauce; it's also excellent on bruschetta, in risotto, over steak or under melted cheese on a pizza bianca.

Keep truffle oils in a cool, dark place with the cap tightly closed — away from the stove. Once opened, refrigerate the Tartufata sauces and the Carpaccio, keeping the truffle slices submerged in their oil, and enjoy them within a couple of weeks.
