The Twist That Made Calabria Famous

Fileja is Calabria's signature pasta: short lengths of dough rolled around a thin rod to create an open spiral that grips sauce in every twist. Made in Italy using traditional methods, it has the firm, satisfying bite that only bronze-cut artisan pasta delivers. Choose the classic, or explore four regional flavours that fold Calabria's most-loved ingredients directly into the dough.

Choose Your Flavour

Classic

The original — pure durum wheat semolina, nothing else. Its twisted shape clings to tomato, chilli and olive-oil based sauces, and it is the traditional partner for 'nduja and slow-cooked ragù.

Lemon

Sun-ripened lemon lifts the dough with a fresh citrus note that keeps rich dishes light. Beautiful with prawns, zucchini, ricotta, or simply olive oil, garlic and cracked pepper.

Bergamot

Bergamot is Calabria's most prized citrus, grown almost nowhere else on earth. Its perfumed, floral character pairs with seafood, burrata and delicate cream sauces for a plate that feels genuinely special.

Red Onion

Sweet Tropea-style red onion gives the dough a warm, savoury depth. Try it with sausage ragù, pancetta and pecorino, or roasted cherry tomatoes.

Calabrian Chilli

Calabria's famous peperoncino brings gentle, building heat baked into every twist. Made for 'nduja, spicy tomato sugo, or anything that welcomes a little fire.

How to Cook It

Cook in generously salted boiling water for 9–11 minutes until al dente. Fileja's spiral holds heat well, so finish it for the last minute in the pan with your sauce and a splash of pasta water for the silkiest result. Each 500 g pack serves four.

Frequently asked question

Our pasta is made in Italy the traditional way — bronze-die extruded and slow-dried at low temperatures. That gives it a rough, porous surface that grips sauce, a firmer bite, and a deeper wheat flavour than mass-produced pasta, which is dried fast and comes out smooth and slippery.

Check the pack for the exact time for your shape, and start tasting a minute or two early. Traditionally dried artisanal pasta is at its best al dente — tender but with a firm centre. If you're finishing it in the pan with sauce, drain it a minute early and let it absorb the sauce as it finishes.

A rule of thumb from the Italian kitchen: long ribbons like spaghetti, tagliolini and pappardelle love smooth, clinging sauces — olive oil, cream, seafood; twists and spirals like fileja, fusilli, casarecce and strozzapreti are built for chunky ragù and pesto; tubes and shells like penne, rigatoni, paccheri and conchiglioni trap thick sauces and are perfect baked. Whatever the shape, a finishing drizzle of Assaggia extra virgin olive oil lifts the whole plate.

Dried pasta is a pantry hero: keep it in a cool, dry place away from direct sunlight, and once opened, in an airtight container. Check the best-before date on your pack — properly stored, it stays at its best for a long time.

Our traditional pasta is made from durum wheat semolina and water — no eggs — so it contains gluten but is plant-based. The exception is the squid ink range, which contains squid ink and isn't suitable for vegans or vegetarians. Always check the ingredients on each pack, especially for flavoured varieties.
