Struncatura, hailing from the Tyrrhenian coast of Reggio Calabria, is a traditional pasta with a storied past and a vibrant present. Once crafted from the milling residues of wheat and bran—scraps once deemed unfit for human consumption—this linguine-like pasta was a staple for Calabria’s poorest communities, sold illicitly due to its unhygienic origins. Today, struncatura is a celebrated symbol of Calabrian resilience, produced with high-quality whole meal durum wheat and semolina using bronze-die extrusion for its signature rough, porous texture. Its dark colour and robust, slightly bitter flavour set it apart, offering a hearty, al dente bite that pairs beautifully with bold, peasant-style sauces—think extra virgin olive oil, garlic, anchovies, Calabrian chilli, or ‘nduja.
